lamb garlic nann pizza


Another recipe from the Coles Magazine September 2023 edition! We have a tradition in our home that every Friday night is home made pizza night so we though we'd give this one a go.

Ingredients


  • 360g pkt Coles Kitchen Garlic Naan

  • 500g Coles Australian Lamb Mince

  • 1 tbs Middle Eastern spice mix

  • 60g Coles Australian Baby Spinach & Rocket

  • 2 roma tomatoes, chopped

  • 1/2 small red onion, thinly sliced

  • 1/4 bunch mint, leaves picked, chopped

  • 100g Greek-style yoghurt


Method


Step 1

Preheat oven to 200°C. Line 2 baking trays with baking paper. Place 1 garlic naan on each lined tray and spray with olive oil spray.


Step 2

Heat a non-stick frying pan over medium-high heat. Add the mince and cook, stirring with a wooden spoon to break up lumps, for 5 mins or until mince changes colour. Stir in the spice mix. Season. Add the spinach and rocket and toss to combine.

Step 3


Spread the mince mixture evenly over each naan, leaving a 2cm border. Bake for 10-12 mins or until the mince mixture is heated through and bases are golden.


Step 4

Top each pizza with the tomato, onion and mint. Season and drizzle with the yoghurt. Cut into pieces to serve.


Our Thoughts


The toppings were really flavorsome but we found the nann bread to dense and heavy.

My Tip


I used moroccan spice which I can only assume is the same or similar to middle eastern spice mix! I'll make this #pizza again but next time use lebanese flat bread as we don't like dense bases, which means the toppings are the #hero. And if you're saving #calories the flat bread is a lot more #carbohydrate friendly. #enjoy #havefuncooking
