I printed this recipe out a while ago and can't lay claim to this, but by goodness it's easy, decadent and so yum!
Serves 4
Prep 25 minutes
Cooking 20 minutes
Ingredients
1.5kg baby potatos (leave skin on)
2 x spring onions - finely sliced
4 x rashers of bacon - finely sliced
1 cup whole egg mayonnaise
1/2 cup sour cream
1 tablespoon wholegrain mustard
salt and pepper to taste
Method
Step 1
Cut the potatos in half and add to a pot of salted boiling water to cook.
Step 2
Then place the bacon into a frying pan and cook until golden then add in the spring onion.
Step 3
Drain the cooked potatos and place in a large bowl.
Step 4
Mix the mayonnaise, sour cream, mustard, salt and pepper. Then carefully stir into the potatos. This combines better when the potatos are still warm.
Step 5
Top with the bacon and spring onion mix. Then I also added flat leaf parsley.
